For our first release, we’re proud to collaborate with consolation wines. Their grapes where picked at perfect ripeness and health. Limited yield and hand-crafted with respect for nature, terroir and year. All grape varieties where picked at sunrise when it’s still cool. This is done to preserve a crisp acidity and freshness.
The grapes where immediately whole-bunch pressed and put in old 300 L barrels to ferment and age on the lees. After six months in barrel, the wines where blended by The Bottle Room. The result is a powerful, aromatic wine with complex flavours of tangerine, honeysuckle, stone-fruits, nuts, hay, cedar and vanilla.
