For our fifth release, we’re proud to collaborate with Consolation Wines. Their grapes are sourced from the very best vines, picked at perfect ripeness and health. Limited yield and hand-crafted with respect for nature, terroir and year. All grape varieties where picked at sunrise when it’s still cool. This is done to preserve a crisp acidity and freshness.
All grape varieties were separately barrel fermented with regular lees stirring. After 6 months in the barrel, the wine was blended by The Bottle Room. The result is a powerful, complex and aromatic wine with flavours of ripe stone fruits, citrus, almonds, oak and butterscotch.
