Description
For our second release, we’re proud to collaborate with consolation wines. Their grapes where picked at perfect ripeness and health. Limited yield and hand-crafted with respect for nature, terroir and year. All grape varieties where picked at sunrise when it’s still cool.
All grapes where de-stemmed and crushed after which the Syrah was fermented in stainless steel tank and the Carignan in a open top old oak barrel. Both varieties had multiple pump-overs/punch-down a day and stayed on the skins for one month. Only the free-run-juice was put in 300 L old oak barrels to age for 10 months before blending and botteling. The result is a powerful, age worthy wine with soft tannins and structure. There are complex flavours of blueberries, black currant, plums, black pepper, sweet spice, liquorice, cedar and vanilla.
