Description
For our seventh release, we’re proud to collaborate with consolation wines. Their grapes where sourced from the very best vines, picked at perfect ripeness and health. Limited yield and hand-crafted with respect for nature, terroir and year.
All grapes where de-stemmed and crushed after which the Syrah was fermented in stainless steel tank and the Carignan in a open top old oak barrel. Both varieties had multiple pump-overs/punch-down a day and stayed on the skins for one month. Only the free-run-juice was put in 300 L old oak barrels to age for 12 months before blending and botteling. The result is a powerful, complex wine with smooth tannins and structure.
